Mixed Berry and Granola Parfait

I believe that I have found something that I could eat almost everyday for breakfast! I absolutely love yogurt parfaits and was first introduced to them by none other than McDonald’s. However, there you get a smallish portion. And I get it…they don’t use fat free yogurt and they want to keep it into a certain calorie catagorie.

So you’ll be pleased to know that after I tracked everything in my calorie counter the entire glass only came out to 237 calories. Wonderful! A full serving of yummy fruit and cereal and creamy yogurt. Delicious, definitely worth scraping the sides of the bowl.

The great thing is that it’s so simple to make and there are so many possibilities when it comes to the fruit, cereal, or yogurt flavors. You can totally makes this your own!

For mine I started out with frozen blueberries, frozen raspberries, fat free raspberry and acai yogurt, and Udi’s gluten free, cranberry and walnut granola.

At first I was just going to slop everything into a bowl but for looks sake I decided to go for a taller glass to show off the layers.

First layer half of the blueberries and raspberries and then half the yogurt. And then repeat. Top it all off with the granola and that it is!

I ate straight away but I’m sure you could make it ahead of time for a quick and easy breakfast before you start your day!

Mixed Berry and Granola Parfait

1/4 cup frozen raspberries
1/4 cup frozen blueberries
6 oz tub of fat free raspberry-acai yogurt
1/4 cup Udi’s Gluten Free cranberry and walnut granola

Layer ingredients into a bowl and refrigerate or eat right away! It’s really as easy as that!
