Weight Watchers Mixed Berry Cobbler

Happy Saturday all! I hope you are staying warm and enjoying a day off. Today I’m posting a recipe that I saw on pinterest a few months ago. It really caught my eye because it is full of berries, only three ingredients, and it’s sweet!

And who doesn’t love that?

First off we start with two bags of berries. I chose one bag of raspberries and one of mixed berries. Honestly you could choose whatever you want. You will also need a box of cake mix and some Sprite.

When I got the berries I just set them in the fridge for a while so they were still semi-frozen when I put them in the pan.

These berries are really tart so if you wanted to mix in some splenda you can. Next time around I probably will!

I suggest you at least thaw them because if you don’t they will be impossible to spread out evenly and when you cook them it will take a lot longer to heat the cobbler all of the way through.

So now there are two ways you can go from here. You can either sprinkle the cake mix over the berries and then pour over about a cup or so of Sprite.

Or you can mix the Sprite and the cake mix and then pour it over.

I went the first route but I will probably mix the two next time.It makes getting all of the ingredients spread evenly through out the cobbler easier.

Now bake at 350 degrees for about 35 mins. If you leave it in there longer it really won’t matter. The picture here is at 35 mins.

 I suggest letting is sit for a about 10 mins to cook and set up. That fruit is super hot! I ended up leaving mine in for about 50 mins. and it was just fine.
 

I absolutly suggest eating this cobbler hot out of the oven and with frozen yogurt. Oh my word was this good! The frozen yogurt competed the tartness of the cobbler. Yummy!

Ingredients
Two 12-oz bags frozen mixed berries/peaches/raspberries, whatever!
1 box white cake mix
1- 1 ½ cups of diet 7-up or other clear soda 
Instructions
Place frozen fruit in a 9×13 baking dish. You can add some splenda if you wish.
Add dry cake mix over the top. Pour soda slowly over cake mix. Don’t mix and you will get a crispy crust.
You can mix the cake mix and the soda together and it will give you a cake like topping.
Bake 350 for 45-50 min or longer until berries are cooked.
